This coffee is special, we mean really special. A single origin from the Peralta Estates utilising a raised bed natural process with an extended anaerobic cherry fermentation to deliver, when roasted, a changing flavour profile as the coffee rests and matures.

The Peralta Family coffee-growing history dates back to the beginning of the 20th century, but it was only in 2008 that brothers Julio and Octavio shifted focus to developing unique specialty preparations. We have always admired the attitude and values that they have brought to their operation and their dedication to trying out new and radical processing methods. From a single plot, varietals are separated and processed in carefully controlled extended fermentations, with this coffee benefitting for an extended 72 hour anoxic fermentation period. 

The resulting cup dynamics give soft wine gum notes with a blood orange acidity when enjoyed fresh from its roast date. As the coffee rest this flavour profile matures with the fermented sugars taking over to deliver more of a rum and raisin flavour profile with deep sugars and a boozy back end

The Peralta family continue to position themselves at the forefront of specialty coffee innovation and we love working with their output to continue to push the boundaries in coffee roasting.

Shipping

- We ship 1 -2 x 225g bags in recyclable, letterbox friendly parcels.

- 3+ x 225g or 1kg coffee orders will be shipped in small - standard parcels

Storage Instructions

All 225g coffee is shipped in resealable bags. Store in a cool, dry place and never leave open to the air.

1kg coffee is shipped in heat sealed bags. Once opened either decant into an airtight container or use a bag crimp. Store as above
